Gut-licious Brownies (and the Story of the Broken Doll)

There was once a Broken Doll with a sad broken gut who had forgotten how to smile. She was addicted to sugary treats and her tummy would throw fits. She was not taught how to eat well, and so she never felt well.

One night she wished upon a falling star: "Please Star, I wish to not be broken – I want to smile again!”

Suddenly, in a flash of pink brilliance, Gutsy Unicorn and Gut-Love Bee appeared to grant her wish. They showed her the path to happy gut health, with nourishing foods, smart snacks, and Just Thrive Probiotic.

"This is how you get your happy gut party on!" Gutsy Unicorn shouted with glee. And with that, the Unicorn and the Bee treated the Broken Doll to a gut-friendly health makeover. 

With a wave of their magic horn and stinger, they produced a bounty of good-for-you ingredients and showed the Broken Doll how to easily transform them into a deliciously gut-friendly treat.

The Broken Doll took a bite out of her new, scrumdiddlyumptious brownie, and for the first time in a thousand years, she and her gut didn’t feel so broken. As a smile crept its way across her face, she proclaimed "Mmm, this is so GUTLICIOUS!" 

So it was that the Gut-licious brownies were born, in all of their gluten-free, refined sugar-free, and junk-free splendor. 

And now, you too can enjoy this yummy gut-happy treat, and live gut-healthily ever after.

Gut-licious Brownies

Ingredients:

  • 2 pasture-raised eggs.
  • ½ cup organic cacao.
  • ½ cup organic pumpkin puree (not pumpkin pie puree.)
  • ½ cup organic maple syrup.
  • ½ tsp baking soda
  • 1 tsp pumpkin spice (optional.)
  • 4 capsules Just Thrive Probiotic (open the capsules)
  • 1 cup + 4 Tbsp almond flour.
  • ½ cup refined sugar-free vegan chocolate (optional)
  • ½ cup sugar-free white chocolate (optional to melt and drizzle – I recommend Evolved chocolate) 

Directions:

  1. Preheat oven to 350 F 
  2. Line a 8 x 8 baking pan with parchment paper and set aside
  3. In a large mixing bowl add eggs, cacao, pumpkin puree, and maple syrup, and mix until well combined
  4. Add the baking soda, pumpkin spice, probiotics, and almond flour, and mix until well combined
  5. Fold in the chocolate
  6. Pour brownie batter into the prepared pan
  7. Bake for 20-25 minutes or until a toothpick comes out clean
  8. Allow the brownies to cool in the pan completely before cutting (you can speed up the process by transferring to the refrigerator)
  9. Slice into 9 pieces. Drizzle melted white chocolate on top. Enjoy.
